Potatoes AuGratin

Since being labelled with hot-headed, blood pressure issues, I’ve had to scale back on my salt. Poor innocent salt. I feel I should quit my job and my pressure would be fine.

Aaaanyway. I used to enjoy the boxed variety of Potatoes Au Gratin, however have you seen the sodium in those things?!? Yikes!!

I had to find a homemade alternative with less salt. I looked through a large amount of recipes, but none of them seemed to fit, so I had to mash them up to get what I wanted.

As with most of my recipes, I’m going to give approximate measurements for the ingredients.

I used a pie dish – Set oven for 350F

  • 6 peeled potatoes – sliced thin
  • 1 sweet onion – sliced thin
  • 2 cups Shredded cheddar
  • 1/2 cup Shredded Parmesan cheese
  • 1 cup of whole milk or better
  • 1 Stick melted butter
  • 1 Teaspoon of potato starch (thickener)
  • Dash of pepper
  • Dash of garlic powder

Mix the butter, milk, potato starch, pepper, garlic and any other spices you might like.

Start layering the potatoes, then onion, then cheeses, then splash some of the milk mix in. Put less in at the bottom and more towards the top as it will soak down, so to speak.

I ended with all the junk on top with some onion, hoping they would get caramelized, which they did!

    • It is frightening how salt can creep into many things you’d not think salt should be in, like some candies.
      I hope that the advice I hear from past salt junkies, is that I will taste ‘more’ flavors soon after I stop the salt. Fingers crossed!


  1. I have the opposite problem. I don’t care for the taste of salt and there are many things I find too salty while my husband considers them bland.
    When I’m training for an endurance event – like now, for this fall’s cycling trip – I eventually have to start taking salt tablets to replace the salt I’m losing from sweating. If I don’t, I start to get serious muscle cramping.
    Sometimes life isn’t fair, is it? 🙂

  2. My husband is on a roll tonight. Gripeier than usual.
    I just feel like giving up you know?
    I would love to have a job loke that place you just showed us. That…would be my dream job.
    So much land to work with and on…
    I love azaleas. Among about most every other plant!
    Weather was finaly good so I put out my lemon tree and neem tree. They are sprouting new leaves like crazy. The wind may blow off the lemons though of it doesn’t settle down. At this point, I don’t care .. at least a little bit.
    I used to have around 180 plants when I was first married. And the all had cute names.
    When things are not going right here at home, they tend to die.
    Same thing is kinda happening here now….:(
    But I would hate for the lemon & neem to die….

    • It’s hard to have a bunch of plants pass on. I feel sometimes it’s the energy flow around them. Especially house plants. Their whole world is in the pot and depends on you for everything. It’s not warm enough here, but all my indoor guys need repotting this summer. I’ve got an orange tree that can smell up the whole house when it blooms!
      Probably like your lemon.
      It’s hard being depressed, I know this. Every day feels like an effort. I hope that you can find solace in your plant buddies and try to see things differently than the dark place you see now. 🙂


      • Yes, I miss plants when they die.
        I love to fill up the whole house with them.
        He smokes so…o_O…
        Many plants take out the nasties in the air, like formaldehyde and other stuff. They create oxygen for us.
        I bet your orand does smell good. I remember mine in Florida. It does smell a lot like the lemon tree.
        There were some days when a person could smell all the malathyon pesticides they sprayed the oranges with all the time.
        I never used pesticides. I don’t like them and what they do. I do like ladybugs and praying mantis. They are natures natural remidies for bug that like to eat our plants.

  3. Our foods seem to be loaded with salt and high fructose a lot. Two bad things that people don’t need. But we do need a little salt, just not overload it!
